Crumpets with Egg, Ham & Cheese

Weekend breakfasts can be a real danger black spot when trying to lose weight! 


This recipe is one of our weekend favourites that really fills you up and keeps you going till lunch. The dish is a good mix of carbs and lean protein. Research suggests this combination can keep hunger pangs at bay for longer than a sugary breakfast. 
The following recipe makes a great breakfast for 2 people.

Ingredients
• 4 x crumpets
• 1 egg. Lightly beaten
• 25ml splash of low fat milk (or cold water)
• Salt & pepper
• 2 sprays of Fry Light One Cal spray oil
• 2 slices of lean ham
• 2 slices of low fat cheese (weighing approximately 20g)
• Low fat butter spread
• Parsley or chopped chives to garnish
• A twist of black pepper

Method
  1. Heat a small frying pan on a medium to high heat.
  2. Mix the egg and milk (or water) together and season lightly with salt and pepper.
  3. Cut the slices of ham and cheese in half. Wrap a half slice of ham around the cheese and place on a small microwavable plate.
  4. When the pan is hot, add the spray oil and add the egg, allowing it to spread out to fill the pan. Allow to fry for approximately 3-5 minutes then carefully turn the omelette over to let the other side to cook. 
  5. Divide the omelette into four quarters and turn off the heat.
  6. Pop the crumpets into the toaster or under the grill for 2-3 minutes until they are golden brown.
  7. Place the ham and cheese slices into the microwave and heat on full power for 30 seconds to melt the cheese.
  8. Remove the crumpets from the toaster and lightly butter them. 
  9. Add a quarter of the omelette and a slice of ham and melted cheese onto each crumpet
  10. Garnish with pepper and parsley/chives and serve.
